This is a fast, easy, and gluten-free quiche base. It can be used with any quiche or pie and is also a good way to use up leftover rice.

Serves: 4 

  • 1 cup cooked rice (about 150g)
  • 1 egg
  • 1 teaspoon softened butter
  • pinch salt

Preparation:5min  ›  Cook:20min  ›  Ready in:25min 

  1. Grease or spray a 22cm quiche or pie dish.
  2. Mix the rice, egg and butter together then press evenly into dish. Bake as you normally would for whichever dish you are making.
