Tuna Salad for Sandwiches

This tuna salad combines all of my husband's favourite flavours....olives, pickles, onions, garlic, mustard, eggs etc. This is no ordinary tuna sandwich! Make it the night before so the flavours develop and you'll have hearty, flavoursome sandwiches to take to work the next day.

Serves: 5 

  • 425g tin of tuna
  • 1/2 onion
  • 2 hard boiled eggs
  • 1/4 red or green capsicum
  • 10 green olives
  • 1/2 stick celery
  • 2 dill pickles
  • 2 cloves garlic
  • 2 tablespoons parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon American mustard
  • 3 tablespoons mayonnaise
  • 1 tablespoon lemon juice

Preparation:30min  ›  Extra time:8hours  ›  Ready in:8hours30min 

  1. Drain and break apart the tuna with your fingers into a large bowl.
  2. Finely dice all ingredients and combine with the tuna.
  3. In a separate bowl, mix together the mustard, mayonnaise and lemon juice.
  4. Pour over the salad, add salt and pepper and mix well.
  5. Refrigerate overnight and use on sandwiches the next day.

This is great on crusty fresh bread rolls...I'm not a big fan of plain old tuna so all the other flavours mixed in give this such a welcome boost. - 21 Apr 2009


Lots of chopping involved but it was worth it in the end...awesome sandwiches! I suppose you could use Dijon or seeded mustard as an alternative to the yellow kind. - 19 Apr 2009
