This is a family favourite that's been in my family for a few generations. It's a low-cost, fail-proof recipe that's always a hit with family, especially my kids - a teenager and a toddler. This can be made in a slow-cooker or on the stove-top. I prefer the slow-cooker because I pop everything in, put the slow-cooker on and forget about it for a few hours.

Serves: 6 

  • 2 tablespoons Gravox or veggie stock equivalent
  • 1 packet dry soup mix
  • 4 potatoes, grated
  • 4 carrots, grated
  • 2 zucchini, grated
  • 2 onions, finely chopped
  • 4 - 6 litres water
  • salt
  • pepper

Preparation:20min  ›  Cook:3hours  ›  Ready in:3hours20min 

  1. Mix the gravy in a litre of water and pour into a pot.
  2. Add soup mix, potatoes, carrots, zucchini and onions. Season with salt and pepper.
  3. Fill pot with water.
  4. SLOW COOKER: set on low and let cook overnight/during the day. Add water if needed (this is a personal taste-thing). More water = a watery soup.
  5. STOVE TOP: cook on medium heat for a few hours (normally about 1 - 2 hours). Add water if needed.
  6. Serve with heaps of bread or just as is.
