Homemade Thai Dipping Sauce

    Don't underestimate the importance of a good dipping sauce with spring rolls and dumplings. It really makes all the difference.

    Serves: 6 

    • 1/2 cup (100g) white sugar
    • 1/4 cup coconut vinegar or white vinegar
    • 1/4 cup water
    • 1 tablespoon fish sauce
    • 1 tablespoon sweet chilli sauce
    • 1/2 bunch coriander, chopped
    • pinch of salt
    • 1 Lebanese cucumber, finely chopped
    • 2 spring onions, finely chopped
    • 2 red chillies, seeds removed and finely chopped

    1. Heat the sugar, vinegar and water in a saucepan till the sugar is melted. Remove from the stove and let cool a bit.
    2. Stir in all the remaining ingredients and pour into a good sized bowl to make dipping easy.
