Serves: 8 

  • 250g dark cooking chocolate
  • 500ml fresh cream
  • 5 eggs
  • 3 tablespoons water
  • 50g sugar
  • pinch of salt

Preparation:20min  ›  Cook:3hours  ›  Ready in:3hours20min 

  1. Put chocolate in double boiler bath with sugar and water.
  2. Heat and stir until very smooth.
  3. Take off heat and keep stirring vigorously every 2 minutes until about body temperature.
  4. While chocolate is cooling down, separate eggs - crack over 2 separate bowls.
  5. Stir yolks into cooling chocolate before it goes granular. Put whites in whisking bowl and into fridge.
  6. In separate bowl, whisk cream.
  7. Stir body temperature chocolate into whisked cream, gently!
  8. Whisk egg whites until white peaks form and fold gently into cream and chocolate mixture.
  9. Set in fridge for 2-3 hours. Enjoy.
  10. Variation: Add some orange rind, or some Grand Marnier.
