Basil and Garlic Vinaigrette

    Simple combination of garlic, basil and parmesan cheese combine in this vinaigrette recipe that can be used on any green salad.

    Serves: 16 

    • 1 small bunch fresh basil leaves
    • 4 tablespoons crushed roasted garlic
    • 2 tablespoons freshly grated Parmesan
    • 4 tablespoons balsamic vinegar
    • 3 cups (750ml) extra-virgin olive oil
    • salt and freshly ground black pepper, to taste

    1. In a blender, combine the basil, garlic, cheese and vinegar. Slowly blend in the oil. Add salt and pepper to taste.

    Made it healthier. Great salad dressing Richard! I cut back the oil by half, yet still used the same amounts of the rest of the ingredients. After tasting, I felt it needed a little brightening, so I added the juice of a half of a lemon. My new favourite!!!!  -  29 Sep 2008


    I loved this dressing! It looks a little dark and not so appealing once it is mixed up, but it tastes wonderful over just a basic salad. A good salad dressing to go with a beef dish.  -  29 Sep 2008
