Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vanilla, vegetable oil and bananas.
Stir flour mixture into banana mixture; batter will be slightly lumpy.
Heat a lightly oiled frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.
I made these in my blender (just remember to ad the wet ingredients first) and they were perfect! I made them with wholemeal flour and used organic maple syrup instead of the sugar My two year old loved them too! - 10 Aug 2012
I made it all in one bowl and just started off like you would a cake - mixed butter, sugar, eggs, vanilla, together, added mashed bananas then dry ingredients with the milk. - 21 Dec 2010
