This delicious dish makes a great dip or entree. Basil and tomatoes are seasoned with green chilli, garlic and sea salt. Serve with toasted baguette slices or pitta wedges.

Ingredients
Serves: 8 

  • 1 bunch fresh basil, finely chopped
  • 2 small tomatoes, finely chopped
  • 150g dried breadcrumbs
  • 3 cloves garlic, minced
  • 1 green chilli, seeded and finely chopped
  • 1 teaspoon sea salt
  • 6 to 8 tablespoons olive oil

Directions

  1. In a medium bowl, stir together the basil, tomatoes, breadcrumbs, garlic, chilli, sea salt and olive oil.
  2. Cover, and refrigerate overnight. Serve with crusty bread or crackers.

Too much breadcrumb, or not enough tomato - I'm not sure which. This recipe is good but it would be much better with about half the breadcrumb. It is dry as is... - 29 Sep 2008
