No Bake Raspberry Cheesecake

    This easy to make cheesecake is not too sweet or rich and requires no baking.

    Serves: 6 

    • 250g pack of Marie biscuits, crushed
    • 80g salt-reduced butter, melted
    • 1 teaspoon ground cinnamon
    • 500g cream cheese, room temperature
    • 1 punnet of raspberries
    • 200g of skim sweetened condensed milk
    • 1/4 cup caster sugar
    • 1 teaspoon vanilla essence
    • 1 tablespoon gelatine
    • 1-2 tablespoons hot water

    Preparation:20min  ›  Extra time:4hours chilling  ›  Ready in:4hours20min 

    1. Melt the gelatine in the hot water making sure there are no lumps, let cool.
    2. Brush a small spring form pan with melted butter. Combine crushed biscuits, melted butter and cinnamon together and press into tin firmly. Refrigerate for ten minutes. Meanwhile blend the cream cheese, condensed milk, a third of the raspberries, sugar, gelatine mix and vanilla essence using a hand mixer or blender. Stir in another third of the whole raspberries and pour into chilled base. Arrange remaining berries on top.
    3. Refrigerate for at least 4 hours.
    4. You could substitute the raspberries with any other fresh berry.

    enjoyed this very much, i had a bag of frozen mixed berries so i used those instead. And i found that i needed a bit more melted butter than 80g. Yum, will try this again.  -  20 Oct 2009
