Anzac biscuit

This is the one Anzac recipe I always fall back on. If you cook them like a slice, make sure you cut them into squares while they're still hot.

Ingredients
Serves : 12
1 cup rolled oats
1/2 cup SR flour
1/2 cup plain flour
3/4 cup dessicated or shredded coconut
3/4 cup sugar
1/2 teaspoon bicarb of soda
2 tablespoons boiling water
125g butter melted
2 tablespoons golden syrup
Preparation method
Prep:

Cook: 15 minutes

Preheat oven to 165 degrees C. Mix all dry ingredients together. Melt the butter and golden syrup together. Dissolve the bicarb in boiling water and add to melted butter and golden syrup. Add to dry ingredients and mix well.
2.
Place in teaspoonfuls on greased baking tray or press the whole mixture together into greased tray. Bake in moderately slow oven for 12-15 mins. Don't overcook.

This recipe is yummy and so easy to make. My son loves these biscuits. This has definently become a family favourite

So Easy and quick. and very yummy.
I added a little extra golden syrup and a little less sugar

I keep forgetting these biscuits are just so easy to make and taste great. I used brown sugar and less sugar - 1/2 cup.

I am wondering how this recipe can be Low GI with the quantity of sugar and syrup in it. Please this is important especially for diabetics

Makes a nice biscuit especially with shredded coconut. Would recommend a slightly higher temp for a crisper biscuit or a longer cooking time (keep them thin if cooking as a slice..
