    This was a quick-fix because the local supermarket was selling off chicken drumsticks very cheaply, and I have never cooked them before. I also had a loaf of bread which was getting old and I hate to waste food... I suddenly remembered crumbing fish with my mum as a youngster.

    Ingredients
    Serves: 2 

    • 1 egg
    • 1 spring onion
    • 2 tsps seeded mustard
    • 3 slices bread (slightly old stale bread works well)
    • 3 tsps mixed herbs (oregano, sage, thyme, rosemary)
    • 2 tsp garlic powder
    • 4 chicken drumsticks

    Directions
    Preparation:10min  ›  Cook:40min  ›  Ready in:50min 

    1. Put the bread in the blender till you have fine breadcrumbs. Add the garlic and herbs and whizz for another moment to mix them. Transfer to a tub with a lid.
    2. Beat egg in bowl and add finely chopped spring onion and mustard. Mix well.
    3. Dip each drumstick into the egg mixture and coat well. Transfer to the breadcrumb tub, roll around and then fix the lid and shake to coat the drumstick thoroughly.
    4. Place in a wide greased oven dish. Bake at 190 C for 40mins (turning after 20mins) or until the crumb is golden brown and the chicken is tender when stabbed with a fork.
    5. (Optional) When you turn the chicken you can also place thick slices of carrot and parsnip around the edge, coating them in the juices.

    This was a definite hit with the family. I made extra to serve 4 people and it was delicious. I took the skin off the chicken to make it healthier and no one noticed lol. Have put this recipe on my computer and printed it out and added to my notes as this is a real keeper. - 21 Dec 2012
