This is a great recipe for morning or afternoon tea. Although similar recipes use just sultanas I like to use mixed fruit for a bit more variety.

Serves: 12 

  • butter or margarine for greasing the tin
  • 400g plain flour
  • 1 level teaspoon salt
  • 1 level teaspoon bicarbonate of soda
  • 20g sugar
  • 100g mixed fruit
  • 1 1/2 cups (375ml) milk

Preparation:10min  ›  Cook:40min  ›  Ready in:50min 

  1. Preheat the oven to 200 degrees C and grease a large loaf tin then set aside.
  2. Combine the flour, salt, bicarbonate of soda, sugar and fruit in a bowl.
  3. Pour all the milk into the flour mixture and mix to a soft consistancy. Turn mixture into the prepared tin then flatten the top of mixture.
  4. Bake for 40 minutes, covering for the last 15 if the top is becoming too brown.
  5. Remove from tin, wrap in a clean tea towel and allow to cool before serving.

Simple and easy recipe. I used 50g dates with 50g sultanas for a good fruity result. - 07 Apr 2014
