Preheat oven according to pizza base instructions.
Dab pesto onto the centre of the pizza base, and spread toward the outer edges. Cut or crumble the goat cheese and spread across the pizza. Arrange tomato slices over goat cheese. Sprinkle with garlic. Brush the edge of the base with a little olive oil.
Place pizza directly on preheated oven rack. Bake for 5 to 10 minutes, or until the crust edges are golden.
After taking pizza out of the oven, allow to cool for a few minutes so that the cheese has time to set. After a couple of minutes, cover the pizza with a few handfuls of rocket. Cut, serve, and enjoy!
I combined this with the roasted pumpkin/red onion pizza recipe! Cooking off the pumpkin /onion first then adding it to the base with the cherry tomatoes (cut in half), i used Fetta goats cheese also and a sprinkling of parmesan. Cooked in the oven for 10 minutes, until the fetta just commenced melting/browning. I tossed the rocket, basil & some sage leaves through balsamic in a bowl, then placed these over pizza and sprinkled extra parmesan over leaves. Delicious and easy as!! - 18 Aug 2009
Refer to tweak, but combining this recipe and the Roasted pumpkin pizza, was very easy and a nice touch for a simple "gourmet" pizza! If you don't like the idea of a vegetarian style pizza an addition of prosciutto strips added is just as nice. - 18 Aug 2009
