Mum Knight's Fudge Cake Slice

    This slice is a family favourite. So easy to prepare and no baking reuqired. It keeps well in the pantry and also can be frozen. A rich chocolate fix!!

    Serves: 12 

    • 250g plain biscuits
    • 100g butter
    • 1/2 cup (110g) caster sugar
    • 1 tablespoon cocoa powder
    • 1 teaspoon vanilla essence
    • 1/4 cup chopped walnuts (optional)
    • 1 egg, lightly beaten
    • Chocolate icing
    • 1 cup (160g) icing sugar
    • 2 tablespoons cocoa
    • 15g butter, melted

    1. Crush biscuits using a rolling pin or food processor to resemble coarse breadcrumbs.
    2. Melt butter, sugar, cocoa and vanilla in a large saucepan over low heat. Add crushed biscuits, chopped walnuts and beaten egg. Mix well. Remove from heat.
    3. Grease a 29cm x 19cm slice tin with butter. Spread and press mixture into the slice tin with the back of a spoon.
    4. Make chocolate icing

    5. Mix ingredients in a bowl to make a thick spreadable icing. Add a little water if necessary.
    6. Ice slice with chocolate icing while still warm. Refrigerate until set. Cut into small squares.
