Chocolate Zucchini Loaf

    A moist scrumptious loaf with chocolate and cinnamon that even the kids will love. It's a great way to use up all of those extra zucchinis in your garden!

    Serves: 20 

    • 60g dark chocolate
    • 3 eggs
    • 1 1/2 cups (330g) white sugar
    • 1 cup (250ml) vegetable oil
    • 2 cups grated zucchini
    • 1 teaspoon vanilla essence
    • 2 cups (250g) plain flour
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 3/4 cup (150g) dark chocolate chips

    1. Preheat oven to 180 degrees C. Lightly grease two 22x13cm loaf tins. In a microwave-safe bowl, microwave chocolate until melted. Stir occasionally until the chocolate is smooth.
    2. In a large bowl, combine eggs, sugar, oil, grated zucchini, vanilla and chocolate; beat well. Stir in the flour baking soda, salt and cinnamon. Fold in the chocolate chips. Pour batter into prepared loaf pans.
    3. Bake in preheated oven for 60 to 70 minutes, or until a toothpick inserted into the centre of a loaf comes out clean.

    This cake is yum! Has a really moist texture to it and tastes a little bit healthy I made mine with marrow (instead of zucchini) and added an extra handful of chocolate chips. Will definitely make again.  -  06 Feb 2010

    I have made this recipe many times and everyone always asks me for the recipe. This is a great way of using the zucchini from the garden and getting your chocolate fix. The only change I make is to use a full cup of chocolate chips. I drain the grated zucchini and squeeze it in a towel before adding it to the batter. Also, as zucchini bread is moist, I grease the bread pans and then line with parchment paper, grease again and then flour to avoid sticking.  -  20 Aug 2012
