Coconut Easter Egg Nests

    These are so cute and are also easy enough for small children to help prepare. Use candy-coated Easter eggs or different coloured jelly beans to decorate nests.

    Serves: 10 

    • 3 drops green food colouring
    • 1/2 teaspoon milk
    • 1 1/3 cups (70g) shredded coconut
    • 200g white chocolate
    • 20-30 small Easter eggs

    Preparation:30min  ›  Cook:5min  ›  Ready in:35min 

    1. In a small bowl, mix food colouring with milk; add coconut and mix until evenly tinted; set aside.
    2. Melt the chocolate over a double boiler or in the microwave, stirring every 15 to 30 seconds until smooth. Mix with coconut mixture and place by spoonfuls on waxed paper. Shape mixture like a bird's nest, making a slight indentation in the centre of each one – but don’t press too hard.
    3. Cool completely and place 2 or 3 little Easter eggs in the centre of each nest.

    Confectioners coating is a product, a chocolate substitute made without cocoa butter. Makers can't sell it as chocolate because of the missing ingredient, so termed confectioners coating. It eliminates the need for tempering, making it easier to dip, or coat items, like the 'birds nest'.     I loved these! They were adorable and earned me the name "Martha" at a party. I used white chocolate chips which worked perfectly and they were really easy to shape into nests. I filled them with mini pastel jelly beans before they cooled completely just so they'd "stick" in the nests better.
