Strawberry Banana Bread

    If you like fruit bread you will love this recipe! It incorporates strawberries, bananas, walnuts and cinnamon with a little orange zest.

    Serves: 24 

    • 4 eggs, lightly beaten
    • 1 cup (220g) white sugar
    • 1/2 punnet strawberries, mashed
    • 2 large bananas, mashed
    • 1 teaspoon finely grated orange rind
    • 1 cup (250ml) vegetable oil
    • 3 cups (375g) plain flour
    • 1 teaspoon bicarb soda
    • 1 1/2 teaspoons ground cinnamon
    • 1/2 teaspoon salt
    • 1/4 teaspoon ground nutmeg
    • 1 cup (125g) chopped walnuts

    1. Preheat oven to 180 degrees C. Grease two 22x13cm loaf tins.
    2. In a medium bowl, mix together flour, bicarb, cinnamon, salt and nutmeg.
    3. In a large bowl, combine eggs, sugar, strawberries, bananas, orange rind and oil. Beat with an electric mixer at medium speed for 2 minutes. Add flour mixture, and stir just until moistened. Stir in walnuts.
    4. Bake for 1 hour, or until a skewer inserted comes out clean. Remove to wire rack to cool.

    I made these as muffins, omitting the orange zest and nutmeg, as I wanted a pure, strawberry-banana flavor. I also left 1/2 cup of the strawberries chunky, which added some texture and color.     It's taken a long time to find a really good muffin mix. This one made 26 medium muffins with good size caps. I just chopped the bananas and strawberries to give some great texture. I left out nutmeg, orange zest and nuts as a personal preference, and added a splash of vanilla extract. It took about 32 minutes at 350!     This is a great recipe! To get more of the strawberry flavor that other reviewers said they couldn't taste, I put the strawberries in sliced instead of mashed. I did let the beaters whip them around a bit but the berries were still chuncky. My family thinks that it is great.
