Watermelon Bowl Fruit Salad

    In this salad the watermelon halves are used as the bowls for a mix of fruits. For a dinner of four each person gets their own salad!

    Serves: 4 

    • 2 small watermelons
    • 1 pineapple peeled, cored and diced
    • 500g seedless grapes
    • 2 apples - peeled, cored and chopped
    • 2 bananas, cut into bite-size pieces

    1. Cut each watermelon in half crossways. Hollow out the insides using a melon baller (or a large metal spoon - then chop into bite size pieces), reserving rind for later use. Rinse grapes under cold running water, and pat dry.
    2. In a bowl, toss together the watermelon pieces, pineapple, apple, banana chunks and grapes. Divide fruit salad among the 4 reserved watermelon "bowls," and serve.

    Cutting the watermelon is a challenge to be sure, but the flavor of cold watermelon and the great presentation is so worth it. Add a little mint and a dash of salt give it a brighter flavor.
