    This was one of those "whats in the fridge" simple salads but it tasted so good I thought I'd share the result. I got the veges just cos they were in season...so they're all fresh and crunchy. Hence the name!

    Ingredients
    Serves: 2 

    • half bunch bok choy
    • half red capsicum
    • half cucumber
    • 8 cherry tomatoes
    • balsamic vinegar and olive oil for dressing
    • salt and pepper to taste

    Directions

    1. Chop the bok choy crossways using both the green and white bits. Slice the cucumber and capsicum into bite size bits. Put all the veges into a bowl with the cherry tomatoes.
    2. Pour about a capful of balsamic vinegar and a slosh of olive oil over the salad and toss through. You may want to add a little salt and pepper in this point.
    3. Thats it-serve!
