Start with this foolproof basic recipe, then add one of several different ingredients for a variety of different muffins. Get comfortable with this base recipe, and you can start creating your own variations!
Stir together the flour, baking powder, salt and sugar in a large bowl. Make a well in the centre. In a small bowl, beat egg with a fork. Stir in milk and oil. Pour all at once into the well in the flour mixture. Mix quickly and lightly with a fork until moistened, but do not beat. The mixture will be thick and lumpy.

Spoon the mixture between 12 well greased muffin pans or line pans with paper muffin cups. Bake in preheated oven for 25 minutes or until golden brown and firm to touch.
These are really basic muffins. They are super easy to make, a plus!
I made them dairy free with soy milk and added 1 tsp vanilla and 1/2 tsp rum essence, along with a little lemon zest (to mask the soy/lower sugar content).
They turn out less fluffy and a little harder in consistency than shown in the picture.
I will be searching further for a dairy free muffin batter, but for those that use milk and are looking for something basic, this is the right recipe.
i added raspberrys. they where not as sweet as id hoped and they r very crunchy on the outside. maybe i left them in too long but i dont think id make again. i also ran out of milk so used mostly water.

These are my favourite muffins to make because they are so yummy, quick and easy! I use wholemeal flour instead of just plain, add a cup of sultanas, leave out the salt, add a teaspoon of vanilla essence and sometimes I grate in the rind of an orange. Tastes fantastic, and they freeze really well too. Great to make with kids.
I made the sultana version. They were edible, but not really inspiring. They started to smell more than done far earlier than I'd expected; I took them out after 20 minutes in the oven and they were slightly overcooked, which I think contributed to my lack of enthusiasm.
Made it healthier.
it was really wonderful - thanks for posting it! my family really enjoyed them. i added 1 cup of sultanas and to make it even healthier i cut the sugar amount to 1/2 a cup and i didn't use caster sugar, i used raw.
i also actually ran out of plain flour, so ended up using 1 cup of plain flour, 1 cup of self-raising and only 1 teaspoon of baking soda (bicarb soda). and they still turned out very well. so thanks! i encourage everyone to give it a go. (its great for those who have cholestrol problems because there's no butter etc in it)

GREAT!!! I added a small mashed banana to the batter. Fill the muffin cases half full and add some chopped stawberries to some, chopped apples to some and dried blueberries to have a little variety. A great on-the-go breakfast for my partner who is on the road all day.
