Mum's Light and Fluffy Scones (not bricks)

    This is one of my mum's scone recipes. Its easily made with items from the cupboard and they are very light and fluffy and delicious with your favorite jam and a dollop of cream.

    Serves: 6 

    • 2 cups (250g) self raising flour
    • 1 egg
    • 1 tablespoon sugar
    • 1/2 cup (125ml) skim milk
    • 1/2 cup (125ml) thickened cream

    Preparation:25min  ›  Cook:12min  ›  Ready in:37min 

    1. Pre-heat oven to 220 degrees C. Lightly grease a large baking tray.
    2. Whip up the egg and add sugar. Beat in the milk and cream. Stir in the (sifted) flour.
    3. Knead onto a flour dusted bench top until a smooth dough consistency.
    4. Cut out 12 scones with a cutter or rim of a glass. Place on greased baking tray.
    5. Cook for 12 mins - removing immediately and let cool for 5-10 mins before serving.

    just made this recipe! yum yum delish! i didnt cut into 12 scones as i thort they would be too small instead i made 9 and to my suprise the grew massivly! next time will chop into 12 for sure! 1st time making scones that didnt turn out like bricks!!  -  27 Feb 2011
