I'm a bit of a stir fry virgin, but I cut my chicken up into little strips before cooking it. I'm sure that's obvious, but usually instructions tell you how and when to cut things up.
Also, i'm lazy, and couldn't be bothered Googling for "julienned" so I just cut the carrot up.
