Preheat oven to 180 degrees C. Grease two 22x13cm loaf tins.
In a large mixing bowl, combine the flour, salt, baking powder, sugar and cinnamon. Add the walnuts, eggs, oil, banana, pineapple, vanilla, coconut and cherries; stir just until blended. Pour batter evenly into the prepared tins.
Bake in preheated oven for 60 minutes, or until a toothpick inserted into the centre of a loaf comes out clean. Cool in the tin for 10 minutes, then remove to a wire rack to cool completely.
This is one of these"how come I never thought of this before" recipes! A very good banana bread. I used fresh pineapple that I blended to break it up and ended up cooking about 10 mins longer. - 17 Feb 2009
