Pineapple and Banana Nut Bread

    This is a recipe that I put together, out of several different ones. It's very easy and a good combination of fruit and nuts.

    Serves: 30 

    • 3 cups (375g) plain flour
    • 3/4 teaspoon salt
    • 1 teaspoon baking powder
    • 1 cup (125g) white sugar
    • 1 teaspoon ground cinnamon
    • 1 cup (125g) chopped walnuts
    • 3 eggs, beaten
    • 1 cup (250ml) vegetable oil
    • 2 cups mashed very ripe banana
    • 250g crushed pineapple, drained
    • 2 teaspoons vanilla essence
    • 1 cup desiccated coconut
    • 1 cup maraschino cherries, diced

    1. Preheat oven to 180 degrees C. Grease two 22x13cm loaf tins.
    2. In a large mixing bowl, combine the flour, salt, baking powder, sugar and cinnamon. Add the walnuts, eggs, oil, banana, pineapple, vanilla, coconut and cherries; stir just until blended. Pour batter evenly into the prepared tins.
    3. Bake in preheated oven for 60 minutes, or until a toothpick inserted into the centre of a loaf comes out clean. Cool in the tin for 10 minutes, then remove to a wire rack to cool completely.

    This is one of these"how come I never thought of this before" recipes! A very good banana bread. I used fresh pineapple that I blended to break it up and ended up cooking about 10 mins longer.  -  17 Feb 2009
