Nice & easy frittata for kids

    An easy dish that kids will love and adults will too! Makes a healthy helping for 4 kids or 2 adults.

    Ingredients
    Serves: 4 

    • 2 large potatoes thinly sliced
    • 1 onion thinly sliced or diced
    • 75ml extra virgin olive oil
    • 3 large eggs
    • 1/2 tsp salt & pepper (or to taste)
    • 1 tsp breadcrumbs (optional)
    • 1 tbs Parmesan cheese (optional)

    Directions

    1. Heat oil on low-med heat in frypan. Add the sliced potatoes and cook for 10 mins turning sides regularly. Add the sliced onions and continue to cook (covered) for a further 5-10 minutes or until tender.
    2. Beat the eggs in a large bowl and add salt & pepper. Place the cooked potatoes & onions in the egg mixture and gently mix so all potatoes are covered in the mix.
    3. Leave it to stand for 10 minutes and heat the oven at 190 degrees C.
    4. Use cooking spray or lightly grease a small oven dish then place the mixture into the dish.
    5. Sprinkle breadcrumbs and grated parmesan cheese over the top. Place in oven and cook for 20 minutes. Stand for 10 minutes before serving with a big leafy salad
