No mayonnaise potato salad

    I don't like mayonnaise - so this potato salad doesn't have any. Tastes good either warm or cold.

    Serves: 8 

    • 3 large potatoes
    • 3 eggs
    • 2 rashers of bacon
    • 3 spring onions or similar (chives, shallots)
    • 1 tub (250g) of sour cream

    Preparation:20min  ›  Cook:10min  ›  Ready in:30min 

    1. Boil a large pot of water. Peel and cube potatoes and add to boiling water and cook until soft (but not mushy), then drain.
    2. Meanwhile, boil eggs for approx 15-20 mins until hard boiled. Remove eggs and place in cold water to cool, then peel and slice.
    3. Slice bacon and fry in butter until nearly crispy.
    4. Slice spring onions finely.
    5. Add potato, egg, bacon and spring onions to a large bowl (note: ingredients can still be hot/warm). Add sour cream and mix well. Serve either warm or cold.

    Made it healthier. Use low fat sour cream  -  12 Jan 2010


    Made it more kid friendly. Fry the spring onions in with the bacon for a minute or so - it makes it less oniony flavour  -  12 Jan 2010
