Plum Sauce

    A very nice plum sauce which is good for marinades or just to eat on meat.

    Serves: 20 

    • 1 kg dark plums
    • 1 kg sugar
    • 670g brown sugar
    • 500g treacle
    • 2.9 lites vinegar
    • 85g garlic
    • 1 1/2 tablespoons salt
    • 20g white pepper
    • 20g whole cloves
    • 3/4 teaspoon cayenne pepper
    • 1 1/2 teaspoons ground ginger

    Preparation:10min  ›  Extra time:1hour30min  ›  Ready in:1hour40min 

    1. Put all ingredients in a large pot. Cook until plums are soft, strain, then boil for 1 hour. Leave until cold.
    2. Pour into clean, dry bottles.

    This recipe has a real problem of effectively having 2.2kg of sugar to 1 km of plums which results in a glue like mixture which cannot be poured. This is very different to other recipes I have tried which were very successful  -  15 Feb 2015
