Yummy Meatloaf

    This makes a very yummy meatloaf, which is not too greasy like a lot of other recipes I've tried. It cooks with the sauce.

    Serves: 4 

    • 750g mince
    • 1 packet French onion soup mix
    • 2 eggs
    • 1 tablespoon flour
    • 1 teaspoon soy sauce
    • For the sauce
    • 1 tablespoon sugar
    • 1 1/2 teaspoons mustard powder
    • 1 1/2 teaspoons curry powder
    • 1 teaspoon oil
    • 3 tablespoons (90g) plum jam

    Preparation:10min  ›  Cook:45min  ›  Ready in:55min 

    1. Preheat oven to 200 degrees C. Mix all meatloaf ingredients together well.
    2. Put on a greased oven tray and mould into a loaf shape.
    3. Mix sauce ingredients together and spoon sauce over loaf.
    4. Cook in preheated oven for 20 mins then reduce to 180 degrees C for a further 25 minutes.

    Made this last night and was absolutely beautiful. My kids loved it too. I would suggest it would serve 6. As a 6 serving meal I did the math and it works out about 5 points per serving or 30 1/2 points for the whole meatloaf if you are doing weight watchers. Totally rate it  -  08 Jun 2009


    This meatloaf was absolutely delicious. The kids loved it and the sauce created a great, although slightly spicy, flavour. I will definately be making this recipe again.  -  28 May 2009


    Made this for tea tonight. Great recipe. I did use only 1 tblsp each of the curry and mustard to make sure it wasn't to spicy for the kids. It was super quick and easy to make. Will be making again  -  04 Feb 2011
