Sausage Curry Casserole

    This sausage casserole is a family favourite of ours. It's great to serve on a cold winters night. For a sweeter curry, try adding a tin of drained pineapple pieces before serving.

    Serves: 4 

    • 500g beef sausages
    • 1 cup grated carrot
    • 1 brown onion, chopped
    • 2 tablespoons plain flour
    • 1 teaspoon hot curry powder
    • 2 teaspoons brown sugar
    • 1 tablespoon tomato sauce
    • 1 tablespoon Worcestershire sauce
    • 1 tablespoon white or malt vinegar
    • 2 cups hot water

    1. Preheat oven to 150 degrees C.
    2. Boil sausages in a large saucepan of boiling water for 5 minutes, then drain. Cut into pieces and place in a 6-cup casserole dish. Sprinkle with carrot and onion.
    3. Combine flour, curry powder, sugar, sauces and vinegar in a jug to make a smooth paste. Stir in hot water. Pour over sausages.
    4. Cook casserole, covered, in oven for 1 hour or until sauce thickens.


    Increase curry powder for a spicier curry.

    Altered ingredient amounts. I used beef stock instead of water but forgot it was concentrated stock, which made it saltier. So added diced potatoes to absorb the salt and a handful of sultanas instead of brown sugar. I also swapped tomato sauce w/ some home made tomato relish for the chunkier texture and cooked the whole lot together in the microwave. Yum!  -  30 Jan 2010
