    A family favourite. Optional: add a tin of drained pineapple pieces before serving.

    Ingredients
    Serves: 4 

    • 500g sausages
    • 1 cup grated carrot
    • 1 chopped onion
    • To make the sauce
    • 2 tbsp flour
    • 1 tsp curry powder
    • 2 tsp brown sugar
    • 1 tbsp tomato sauce
    • 1 tbsp Worcestershire sauce
    • 1 tbsp vinegar
    • 2 cups (500ml) hot water

    Directions
    Preparation:15min  ›  Cook:1hour  ›  Ready in:1hour15min 

    1. Boil sausages for 5 mins, then drain. Cut into pieces and place in casserole dish. Sprinkle over with carrot and onion.
    2. Mix sauce to a smooth paste then add hot water. Mix together then pour over sausages.
    3. Cook slowly either on top of stove or in oven at 150°C for 1 hour.

    Altered ingredient amounts. I used beef stock instead of water but forgot it was concentrated stock, which made it saltier. So added diced potatoes to absorb the salt and a handful of sultanas instead of brown sugar. I also swapped tomato sauce w/ some home made tomato relish for the chunkier texture and cooked the whole lot together in the microwave. Yum! - 30 Jan 2010
