This is a simple yet extremely tasty and crusty way to serve boring lamb chops this Australia Day. Its only 5 mins to prepare which makes it ideal (and one of my favorite) dinner party dishes.
Place breadcrumbs & mint jelly in a bowl and mix until evenly mixed.

PLace lamb chops on a lightly greased oven tray, season with salt and pepper, then spoon 1/4 of the mixture onto each lamb chop patting it firmly onto the chop to ensure it holds down (should look a bit like stuffing but a little less moist)

Place lamb chops into oven for 20-25 mins or until cooked through.
Made this just for my husband and me. The combo ofthe mint jelly and the breadcrumbs keep the chops nice and moist while baking. Put more warmed mint jelly on when we ate them. Nice and easy.
