Awesome Vegetarian Pasta Salad

    This a great and easy pasta salad to make for the family or for guests. It's great with barbecue meats or as part of a vegetarian meal. I hope you enjoy it as much as my family does.

    Serves: 8 

    • 2 broccoli, cut up into small florettes
    • 1/2 cup frozen peas
    • 1/2 cup frozen sweet corn
    • 50g snow peas, topped, tailed and cut lengthways
    • 400g penne pasta
    • 1/2-1 cup honey soy mayonnaise
    • 3 tablespoons reduced fat sour cream
    • 1 tablespoon Australian mustard
    • 1 teaspoon lemon rind
    • 1 tablespoon McCormicks "Season-All" seasoning
    • salt to taste
    • 2 carrots, shredded
    • 6 green shallots, chopped finely

    1. Half-fill a small saucepan with boiling water and add broccoli florettes. After 4 minutes add frozen peas and corn then add snow peas. Allow to boil for a further 4 minutes, strain and refresh under cold water.
    2. Boil pasta in plenty of salted water until "al dente".
    3. In a large bowl mix mayonnaise, sour cream, mustard, lemon rind, Season-All seasoning and salt.
    4. Combine all other ingredients and mix well.
    5. Refrigerate for an hour before serving.

    Altered ingredient amounts. We couldn't find Honey Soy Mayonnaise, so used my Japanese mayo with a blurt of honey. Tasted ace!  -  24 Jan 2009
