Vegan Pizza

    Uses soy cheese, lebanese bread easy toppings - this is another quick and easy recipe that takes no time to prepare. Great for mid week dinners when teamed with a side of salad or other sort. This is easily adapted to a non vegan/vegetarian diet as well. Just use your favorite sausage meat (eg Cabanossi) and replace soy with cheese.

    Serves: 2 

    • 1 large Lebanese bread for the base
    • 100 grams soy cheese (can increase/decrease depending on your preference)
    • 1/4 cup fresh basil leaves
    • 4 tbs tomato paste
    • 1 vegetarian sausage
    • 10 cherry tomatoes
    • 5 large mushrooms
    • 2 tbs pine nuts
    • salt & pepper to taste

    1. Preheat oven to 180 degrees C. Chop cherry tomatoes into halves, slice vegetable sausage and the mushrooms.
    2. Spread the tomato paste evenly around the Lebanese bread base. Then place tomatoes, sausage, basil and mushrooms onto the base.
    3. Thinly slice the soy cheese into pieces. (Most soy cheese won't grate but can be easily sliced and then place on top of the pizza.)
    4. Sprinkle pine nuts and season with a sprinkle of salt and pepper and cook in preheated oven for 15minutes.
