    This is a great way to add a bit more character to your broccoli when looking for a side dish that is a bit more special.

    Ingredients
    Serves: 6 

    • 750g broccoli, cut into bite size pieces
    • 85g butter
    • 1 teaspoon brown sugar, to taste
    • 3 tablespoons (60ml) soy sauce
    • 2 teaspoons white vinegar
    • 1/4 teaspoon ground black pepper
    • 2 cloves garlic, minced
    • 1/3 cup (80g) chopped salted cashews

    1. Steam or boil the broccoli until tender but still crisp; about 7 minutes. Drain and arrange broccoli on a serving platter.
    2. While the broccoli is cooking, melt the butter in a small frypan over medium heat. Mix in the brown sugar, soy sauce, vinegar, pepper and garlic. Bring to a boil (make sure it doesn’t burn) then remove from the heat.
    3. Mix in the cashews and pour the garlic butter sauce over the broccoli. Serve immediately.

    Altered ingredient amounts. I used less soy and butter as the first time it was a little salty. The second time I made this, I replaced half of the butter with low sodium chicken stock and unsalted cashews. - 18 Jul 2010
