Lemon and thyme sausage and goats cheese roll (or plait) alla pierro

    It began as breaded sausages made with cheap bulk sausagemeat and breadcrumbs made from my own bread. One day i decided to give it a rev.and so I bought some hot Italian sausages and some plain pork sausages,i mixed them together,added goats cheese and parmesan cheese, and wrapped the whole lot in puff pastry.

    Serves: 2 

    • 1 tbsp Olive oil
    • 6 Spring onions, finely sliced
    • 1 garlic clove, crushed
    • a pinch chilli powder
    • 225g sausage meat, plain or spicy
    • 200g goats cheese
    • 2tbls.grated parmesan cheese
    • 1 grated lemon zest
    • 1 tbsp chopped thyme
    • 1 pinch freshly grated nutmeg
    • 1 dash of freshly ground black pepper
    • 500g Puff Pastry
    • 1 egg, beaten

    1. Heat the olive oil in a frying pan, add in the spring onion and garlic and fry them gently for 5 minutes over a low heat . Cool
    2. Preheat the oven to 200ºC.
    3. In a mixing bowl, mix the sausage meat, lemon zest, thyme, goats cheese and nutmeg and season to taste,add the cooked onion and garlic and mix well.
    4. Roll out the pastry on a floured board into a rectangle, roughly 30 by 10cm. Place the pastry rectangle on a baking sheet.
    5. Now place the sausage meat mixture down the middle,roll the pastry up into a sausage shape,or you can plait it if you like.
    6. Brush with beaten egg wash and bake for 25 - 30 minutes until golden brown. Serve warm from the oven with scalloped potatoes and peas.
