Tomato Soup in a Slow Cooker

This recipe has a rich tomato flavour just as old fashioned tomato soup should have. It takes very little prep work and you can leave your slow cooker on and let it cook your soup for you! It is best made with real chicken stock.

Ingredients

Serves: 4 

  • 1 onion, chopped roughly
  • 1 tablespoon olive oil
  • 4 cups (1 litre) chicken stock
  • 2 tablespoons sweet chilli sauce
  • 2 teaspoons minced galic
  • 3 teaspoons sugar
  • 1/2 teaspoon dried oregano
  • 1 (400g) tin tomatoes in juice, drained
  • 2 tablespoon tomato paste
  • 1 kg ripe tomatos, cut in half
  • salt and pepper, to taste

Directions

Preparation:8min  ›  Cook:3hours  ›  Ready in:3hours8min 

  1. Turn on slow cooker on high and preheat.
  2. Place onion and olive oil in a microwave safe dish and cook on high 2 minutes.
  3. Place all ingredients except ripe tomatoes into slow cooker and stir to combine. Add halved tomatoes and cover then cook on high for 2-3 hours or until tomatoes are soft.
  4. Puree soup in a blender and season with freshly cracked salt and pepper. If desired garnish with a dollop of sour cream and parsley.

Altered ingredient amounts. I used various organic and yellow tomatoes / 800ml of tin tomatoes, drained / 156ml tomato paste / 880ml of liquid chicken broth / Fiery Chili pepper sauce (as didn't have the sweet chili sauce) /// quite spicy, but not overly. Good glowing soup. - 18 Sep 2010
