This easy prawn salad contains no lettuce. It's perfect for barbeques or as a light dinner on its own. The lime gives it a nice tangy kick.

Serves: 6 

  • 625g cooked, deveined and shelled prawns
  • 3 avocados, peeled, stone removed and diced
  • 1 bunch shallots, chopped
  • 3 large red tomatoes, diced
  • 1 capsicum, chopped
  • 1/2 bunch coriander, chopped
  • 2 limes, juiced
  • salt and ground black pepper to taste

  1. Cut the prawns in half and place in a large bowl; add the avocado, shallots, tomatoes, capsicum, coriander, and lime juice; mix.
  2. Season with salt and pepper.
  3. Refrigerate at least 15 minutes before serving.
