Steamed salmon with mango mint salsa

    This low fat dish is one of our favourites in summer. It's colourful, healthy and is an explosion of flavours in your mouth! I use an electric steamer for the salmon and pre-make the salsa up to a day ahead and refrigerate it to allow flavours to develop.

    Ingredients
    Serves: 2 

    • 2 salmon portions
    • 1 large ripe mango
    • 1 purple onion
    • 1/2 red capsicum
    • 1 clove garlic
    • fresh coriander
    • fresh mint
    • 3 tablspoons pickled ginger
    • 1 tablespoon crushed/chopped chilli
    • 3 tablspoons lime juice
    • 5 tablspoons olive oil
    • salt & pepper to taste

    1. Dice the mango, onion and capsicum into small even-sized cubes.
    2. Finely chop the chilli, coriander, mint & ginger.
    3. Place all of this in airtight container. Add oil, lime juice and salt & pepper. Mix well. Seal container and refrigerate.
    4. Steam 2 salmon fillets for aprox. 20 minutes in electric steamer. Serve on a bed of basmati rice with salsa heaped over the fish. Enjoy!
