Chocolate Nut Cookies

    I was given some of these biscuits as a 'Thank You' gift in the early 90's and they have become a firm favourite in our family. I've never had a failure with these - even when I once forgot the baking powder and baking soda and had to take the rolled balls off the trays and back into the bowl to mix these in!

    Serves: 70 

    • 250g butter
    • 1 cup (220g) white sugar
    • 1 cup (155g) brown sugar
    • 2 eggs
    • 1 teaspoon vanilla essence
    • 2 cups (250g) plain flour
    • 2 cups (180g) rolled oats
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1 1/2 cups (250g) chopped nuts (peanuts or macadamias are good)
    • 375g dark chocolate buttons (roughly chopped)

    Preparation:15min  ›  Cook:10min  ›  Ready in:25min 

    1. Preheat oven to at 190 degrees C.
    2. Cream softened butter and sugar. Add eggs and vanilla and beat until mixed.
    3. Add the flour, oats, baking powder and baking soda and mix well. Mix in nuts and chocolate with wooden spoon or scraper.
    4. Take a teaspoon or tablespoon at a time and roll into balls. Place about 5cm apart on a greased oven tray. Press down lightly with a spatula.
    5. Bake for 10 minutes or until golden brown.
    6. Lift off tray carefully and cool on biscuit rack. Store in an airtight container.


    Depending on the size you can get 60-80 biscuits out of this.

    What yummy biscuits. I usually end up in a big mess when making biscuits but this recipe is so easy and delicious. I got 70 biscuits out of it. Will be making a lot more of these.  -  10 Jun 2009
