Refreshing summer steak salad

    A healthy way to welcome summer flavours in a simple, tangy salad. You can also barbeque the steak and mushrooms to add that extra summer taste to the meal.

    Serves: 1 

    • 100g spinach, washed
    • 1/2 avocado, cut into chunks
    • 100g beef sandwich steak, marinated as desired
    • 1/2 clove garlic, finely diced
    • white mushrooms (as many as you like)
    • 1 hard boiled egg, halved
    • shaved parmesan
    • For the dressing
    • 2 tbs soy sauce
    • 2 tbs lemon juice
    • 1 tbs extra virgin olive oil

    1. Sautee mushrooms (chopped into quarters) and garlic in a pan until mushrooms are brown, adding salt to taste.
    2. Add beef and pan fry til cooked through or medium rare. Take off heat and immediately dish onto a bed of spinach. The heat will wilt some of the spinach, this is okay.
    3. Top with avocado chunks, hard boiled egg and parmesan. Drizzle dressing over and enjoy!

    A great tasting filling salad that I would make again! The salad dressing wasn't to my taste but that was not a big deal to substitute my usual dressing. thanks for sharing your recipe!  -  13 May 2013
