Kristy's Moist Carrot Cake with Cream Cheese Icing

    This is by far the best carrot cake recipe I have ever made, and believe me I have tried a few. It is no fail and super moist everytime. This recipe also includes a toffeed carrot and cream cheese icing decoration!

    Serves: 8 

    • 1/2 cup (125ml) olive oil
    • 1/2 cup (110g) firmly packed brown sugar
    • 2 eggs
    • 3/4 cup (105g) plain flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon bi carb soda
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon nutmeg
    • 1 cup firmly packed grated carrot
    • 1/2 cup (60g) chopped walnuts
    • Decoration
    • 1 large carrot
    • 1/4 cup (55g) white sugar
    • 2 green lolly snakes
    • 125g cream cheese
    • 1/3 cup (60g) icing sugar

    1. Preheat oven 160 degrees C. Lightly grease and line a 20cm round cake tin.
    2. Combine oil, sugar and eggs in a bowl and whisk to combine.
    3. Sift flour, baking powder, bi carb, cinnamon & nutmeg into egg mixture. Stir in grated carrot and walnuts and mix all together.
    4. Spoon the cake batter into prepared tin and bake for 25-30 mins or until browned and a skewer comes out clean. Stand cake in tin for 10 minutes then turn out onto a wire rack to cool completely.
    5. Meanwhile, make the decoration

    6. Using a knife, carve the carrot into 8 small carrot shapes.
    7. Heat sugar in a medium frying pan over medium heat, stirring, until dissolved. Bring to the boil. Boil, without stirring, until mixture is golden in colour. Add baby carrots and turn to coat. Turn out onto baking paper and stand until the toffee sets. Meanwhile, cut snakes to form the tops of carrots.
    8. Beat cream cheese and icing sugar until smooth. Spread over the cake. Place toffee carrots and snake tops around cake.

    you put 2tsp baking powder in the ingredients but don't include it in the recipe so I left it out hoping the bicarbonate soda would help it rise - very flat  -  03 Feb 2012

    yes very nice cake. Family loved it. Very thin cake thou so i suggest if you have carrot cake lovers its best to make two and layer them with cream cheese in the middle. Delicious!!  -  29 Mar 2011
