Mum's staple recipe for morning brunch.

Serves: 4 

  • 1 cup self raising flour
  • pinch salt
  • 1/4 teaspoon bicarb soda
  • 2 tablespoons sugar
  • 1 egg
  • 1/2 cup milk with 1 teaspoon vinegar/lemon juice
  • 15g butter, melted

Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

  1. Sift flour, salt and bicarb into a bowl. Make a well in the centre and add sugar, egg, milk and melted butter.
  2. Stir mix until it is a smooth batter, adding more milk if very thick.
  3. Grease heavy based frypan with butter and heat to very hot.
  4. Spoon mixture into the pan to make 6cm round pikelets.
  5. Cook until bubbles appear on the top, flip and cook on the other side.
  6. Serve warm with lemon and sugar (or choice of condiments).

Easy to make and replicable. Double or triple the proportions to batch cook and freeze for kids school lunches. Reheating in the toaster makes them come up fresh and crunchy. - 29 Aug 2009


Simple and quick standard recipe. Very good results. This recipe is useful if you are in a rush for breakfast. I used only half the sugar as i thought they would taste too sweet with my toppings. I topped the pancakes with sliced ripe banana and a drizzle of maple syrup or lime/lemon juice. - 28 Feb 2009
