Sue's Chicken Curry

    A dish I put together myself when all I had left in the fridge before shopping day was chicken, red capsicum and onions.

    Serves: 4 

    • 3 large or 4 small chicken breast fillets
    • 1 onion, chopped
    • 1 red capsicum, chopped
    • 2 tablespoons curry powder
    • 1 tablepoon plain flour
    • 2 cups (500ml) chicken stock
    • 1 tablespoon oil
    • rice to serve

    Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Heat oil in frying pan. When hot add chicken, red capsicum and onion.
    2. Cook, stirring until the chicken has turned white in colour.
    3. Reduce the heat in frying pan, add flour and stir until combined with chicken mixture.
    4. Add curry powder, stir until combined with chicken flour mixture.
    5. Add chicken stock, slowly, so as not to go lumpy, until the mixture thickens.
    6. Reduce heat to low, simmer for 10-15 minutes.
    7. Serve with rice.

    Was in a hurry so gave this a try. Used yellow pepper and the curry powder was a good quality Madras. Does what it says on the tin but the result lacks taste sophistication as one might expect. Too much liquid so I thickened it but half the liquid might help. If you're into curry skip it but for a rapid job when you're lacking ingredients it works.  -  02 Nov 2011  (Review from Allrecipes UK & Ireland)
