Wild Rocket, Cherry Tomato and Pine Nut Salad

    A quick, fabulous and nutritious salad. You can use either baby rocket or wild rocket in this dish.

    Serves: 4 

    • 4 cups wild rocket leaves, rinsed and dried
    • 1/2 punnet cherry tomatoes, halved
    • 1/4 cup (30g) grated Parmesan cheese
    • 2 tablespoons olive oil
    • 1 tablespoon rice or white vinegar
    • salt and freshly ground black pepper to taste
    • 40g pine nuts
    • 1 large avocado - peeled, pitted and sliced

    1. Combine the olive oil, vinegar and salt and pepper in a jar with a lid. Replace the lid and shake to combine.
    2. Place all other ingredients in a bowl and toss together well with the dressing. Arrange the sliced avocado on top to serve.
