Mug Meatloaf

    15 minutes

If you want meatloaf but you don't want tons of leftovers, try making a single serving in a mug. Perfect for an easy one person dinner.

    45 people made this

    Serves: 1

    • 1 slice white bread, torn into pieces
    • 2 tablespoons (40ml) milk
    • 1/2 teaspoon Worcestershire sauce
    • 125g mince
    • 1 shallot, thinly sliced
    • generous pinch of both salt and ground black pepper

    Preparation:10min  ›  Cook:5min  ›  Ready in:15min

    1. Place the torn bread into a small bowl and pour in the milk and Worcestershire sauce. Set aside for a few minutes for the bread to absorb the liquid. Add the mince, chopped shallot, salt and pepper to the bread; mix well and place into a 250ml microwave-safe mug.
    2. Cook in the microwave at 70 percent power until the meatloaf is firm and no longer pink in the centre, 4 to 5 1/2 minutes depending on the microwave. Remove the meatloaf from the microwave, and allow to stand 2 minutes before serving.

Used different ingredients. I didn’t have Worcestershire sauce, but used a little soy sauce and chilli sauce instead.  -  30 Jul 2010

I have to clean my microwave now…. ;-) but I would have never guessed that something like this this would taste that good! Well, it was not the best meatloaf I ever had, but spicy, moist and tasty.  -  30 Jul 2010
