If you prefer more nuts than fruit in your Christmas baking, then look no further! But there are some fruits, like sweet cherries.


Serves: 12 

  • 225g walnuts, chopped
  • 225g pecans, chopped
  • 675g blanched whole almonds, chopped
  • 450g Brazil nuts
  • 475g glace cherries
  • 500g pitted dates
  • 125g plain flour
  • 200g caster sugar
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 4 eggs
  • 1 dessertspoon vanilla essence

  1. Preheat oven to 140 degrees C. Line two 23x12cm loaf tins with baking paper and lightly grease.
  2. Combine all the nuts with all the dried fruits, mix well.
  3. Sift together the flour, sugar, baking powder and salt. Combine with nut mixture and mix well.
  4. Beat eggs and vanilla then add to the nut and flour mixture. Combine well.
  5. Transfer into the prepared loaf tins and bake for 90 minutes to 2 hours. Set aside for 5 minutes then remove from tins. Completely cool on wire rack.
