Quick and Easy Chocolate Cake
This cake is great for when you have friends arriving in an hour and nothing prepared to serve for sweets!
Ingredients
Serves: 10
- 1 cup (220g) caster sugar
- 1 cup (150g) self-raising flour
- 2 tablespoons cocoa powder
- 2 eggs
- 1/2 teaspoon vanilla essence
- 1/2 cup (125ml) milk
- 75g butter, melted

- Preheat oven to 180 degrees C. Grease and line a 20cm round cake tin.
- Place dry ingredients in a bowl and mix well to remove any lumps.
- Add eggs, vanilla essence and milk and mix well. Add melted butter and stir until mixture is smooth.
- Spread cake mixture into prepared tin. Bake for about 45 minutes or until cake is cooked when tested with a skewer. Cool cake in tin for 5 minutes before turning out onto a wire rack to cool completely.

I have a question....when you say cake tin, what size? It looks like a layer cake, but the ingredient amounts leads me to think different. - 10 Jul 2011
Altered ingredient amounts. 1 3/4 sr flour 1 1/2 cups sugar 4 tablespoons cocoa 3 eggs 1 cup milk 125grams butter 1/4 teaspoon bi-carb soda 1 teaspoon vanilla i also cut it into layers and spread between the layers with raspberry jam and whipped cream then covered the cake with Chocolate ganache - 28 Dec 2009
great, easy recipe. ready in no time these were a hit with the kids! I made them into cupcakes and iced them with my chocolate creamcheese icing. They were moist, fluffy and delicious! I added an extra tablespoon of cocoa to the recipe. Will make again. - 21 Jan 2011
