Creamy Tomato Sauce for Pasta

    Is this the easiest pasta sauce ever? Absolutely delicious and so easy to make. Serve over your favorite pasta.

    Serves: 4 

    • 2 tablespoons olive oil
    • 1 onion, diced
    • 1 clove garlic, minced
    • 1 (400g) tin diced tomatoes, undrained
    • 1 tablespoon dried basil leaves
    • 1/4 teaspoon dried oregano
    • 1/4 teaspoon salt
    • 1/8 teaspoon ground black pepper
    • 1/2 cup (125ml) heavy cream
    • 1 tablespoon butter

    1. In a saucepan, saute onion and garlic in olive oil over medium heat. Make sure it doesn't burn. Add tomatoes, basil, oregano, salt and pepper. Bring to boil and continue to boil 5 minutes or until most of the liquid evaporates.
    2. Remove from heat; stir in whipping cream and butter. Reduce heat and simmer 5 more minutes.

    Altered ingredient amounts. I added extra garlic and used fresh basil from my garden. I also added a cube of frozen spinach for extra goodness and the kids still loved it!  -  05 Nov 2008


    I doubled this and froze extra portions. I will use when I don't have time to cook and serve with pasta or chicken. This recipe is truly delicious and versatile  -  30 Jun 2009
