Strawberry Muffins (Eggless and Nut-Free)

    Based on the Strawberry Cake recipe with some modifications, which resulted in a nut-free and egg-free recipe, and still delicious.

    Serves: 12 

    • 1 punnet (250g) fresh strawberries
    • 375g (3 cups) plain flour
    • 175g (3/4 cups) raw sugar
    • 2 teaspoons ground cinnamon
    • 1 teaspoon salt
    • 1 teaspoon baking soda
    • 1/2 cup (125ml) canola oil
    • 1/2 cup (125ml) apple sauce
    • 1 cup chocolate chips (opt.)

    1. Preheat oven to 180 degrees C (all ovens work differently, use this as a guideline).
    2. Place patty pans in muffin tin.
    3. Slice strawberries and place in medium-sized bowl. Sprinkle with 1/3 of the sugar, stir and set aside.
    4. Sift flour, cinnamon, salt and baking soda in large bowl, add sugar and mix well.
    5. Puree the strawberries with the apple sauce and add the oil and puree to homogenise, it doesn't have to be smooth, just mixed. I like having a few strawberry morsels left in the batter.
    6. Add strawberry mixture to flour mixture, blending until dry ingredients are just moistened. Stir in chocolate chips.
    7. Fill each muffin tin.
    8. Bake until tester inserted comes out clean. *Beware that if you used chocolate chips, they will be melted and will make it look as if your tester is not coming out clean, just make sure you differentiate between uncooked batter, and melted chocolate :)
    9. Let cool in tin on wire rack for 10 minutes.
    10. Take out muffins and let cool completely.

    Made a half-batch of these last week with my toddlers- even though I forgot to blend the oil with the strawberries and added it afterwards, they still turned out lovely and moist. The girls loved them and my chef hubby used them for a cooking session with the kids at daycare where they were a huge hit! Will be cooing often!  -  31 Aug 2012


    I hadn't made this in over a year, and made it, twice in a row. The whole family still LOVES them, so I thought I'd give them a rating (it was a recipe adapted from another recipe so I don't think I'm cheating! ) - it's easy and quick too, surprises me each time.
