Ingredients

Serves: 6
  • 4 tablespoons olive oil
  • 4 tablespoons lemon juice
  • 3 tablespoons chopped fresh parsley
  • 1 tablespoon minced garlic
  • freshly ground black pepper to taste
  • chilli flakes to taste (optional)
  • 700g uncooked fresh king prawns, peeled and deveined

Preparation method

Prep: 40 minutes | Cook: 5 minutes
1.
In a large, glass bowl, stir together the olive oil, lemon juice, parsley, garlic and black pepper. Season with chilli flakes, if desired. Add prawns and toss to coat. Marinate in the refrigerator for 30 minutes.
2.
Preheat barbecue for high heat. Thread prawns onto skewers, piercing once near the tail and once near the head. Discard any remaining marinade.
3.
Lightly oil cooking hotplate. Cook for 2 to 3 minutes per side, or until opaque.

This is darn good! However, i do NOT oil my cooking surfaces be they grill, pan or plate. Siimply brush or spray the food that you are cooking with oil of your choice - you already have oil in the marinade!

Altered ingredient amounts. I followed the recipe as is,but i didn't have fresh parsley on hand so i used dried italian herbs instead(probably about 1-2 teaspoons) and i also added the zest of 1 lemon.With the garlic,i crushed 2 fresh cloves instead of using the minced garlic in jar.

Altered ingredient amounts. My partner couldn't get enough of this dish! I made a double batch of the marinade and set aside half to coat the pasta; I then marinated pre-cooked prawns for about 45 minutes. I tossed the prawns and marinade together with wholewheat linguine. The family loved it and partner commented that it was the best prawns & pasta he'd ever had.

A definite favourite!! The marinade is so easy to prepare and can be done ahead of time. Served over linguine with the following sauce: Saute together 100g butter, juice of 1 lemon, 1 T minced garlic, 1 T (or more to taste) dried crushed chillies and a spash of white wine. Simply delicious!!!!!

My family absolutely goes crazy when I make this recipe. I follow the recipe exactly and it turns out incredible. I serve it with pasta that I toss with olive oil, garlic, salt, parmesan, italian herbs and crushed chilli flakes. It is delicious

Thank you for this perfect light summer fare. I served with pasta that was lightly tossed with some of the marinade I kept separate- just added a little fresh lemon and some grated parmesan when served.

I marinated these for over an hour and they came out so flavourful and tender! The best prawns I've ever had! I made a butter garlic sauce and served with linguine with fresh parsley on top. Can't wait to make again! Thank you!
