Easy Cheesy Broccoli Quiche

    Serves: 4 

    • 1 sheet frozen shortcrust pastry or unbaked pie shell
    • 40g butter
    • 1 onion, minced
    • 1 teaspoon minced garlic
    • 2 cups chopped fresh broccoli
    • 1 1/2 cups (185g) grated mozzarella cheese
    • 4 eggs, well whisked
    • 1 1/2 cups (375ml) milk
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 tablespoon butter, melted

    1. Preheat oven to 180 degrees C.
    2. Over medium-low heat melt 40g butter in a large saucepan. Add onions, garlic and broccoli. Cook slowly, stirring occasionally until the vegetables are soft. Spoon vegetables into crust and sprinkle with cheese.
    3. Combine eggs and milk. Season with salt and pepper. Stir in the tablespoon of melted butter. Pour egg mixture over vegetables and cheese.
    4. Bake in preheated oven for 30 minutes or until centre has set.

    Altered ingredient amounts. I used half cream and half milk cos I think quiches really taste better with cream! I also used tasty not mozzarella cheese and that was fine too.  -  21 Oct 2008
